Help with sculpting!!

Hi,
I wondered if anyone can give me advice on producing a manaquein for a mounted 54mm figure, ive started the horse (ill post pictures in a minute) its canabalised from Historex parts!
What i plan to make is a figure of a Royal Dragoon Guard returning with a captured French Flag at Waterloo (quite a famous painting/drawing actually, ill try and post that too),
