Does anybody know how to represent sweat on the gladiator figure?
Can i use gloss varnish?

Better try a satin... gloss would be very unrealistic.

Considering the small scale you may coat all the flesh areas with a very opaque medium and paint the sweat with a 0/00 brush using a mix of glossy paint and just a bit of white glue to give it more volume.

Try to rub surface with a brush(softly),with a little water.You can achieve better results when paint is not completely dry.
Just another option,I use it for the fleshtones.

I think a diluted satin varnish will be most suitable,for very intense result I would use tamiya clear.
